News
Since January 2001, one aim of GTS has been to create a continual increase
in the number of employed staff. GTS sees a strong team of staff as the
key to a smooth operating restaurant AND charity. GTS now employs 40 members
of staff and hopes to keep that number increasing, by introducing more
projects

The
GTS Restaurant was built in late 2002 when our 3 yr lease for Dardeema
was not honoured.

are proud of their achievements.
Iin late 2003 we
rebuilt the toilets with tiled floors and provided a staff shower room,
the generator house was altered to house our large diesel generator that
runs all the power equipment on site
We re-roofed the
Restaurant, lined the inside and decorated everywhere.
In early 2004,
(no pictures yet), we joined the Garden to the Restaurant and extended
the entrance to improve customer access and visability, resurfaced the
stage and built proper garden tables and shades.

Aimee returned for
a 2nd yearwith us from Canada and has created the Music Museum of West
African instrumnets with Koca her husband.

GTS
Manager in The Gambia

Kabs runs
the GTS Gambia Charity. He obtained our charity status in June 2003
and
has steadily expanded GTS's influence and scope.
He visited UK in August and was an excellent ambassador for Gambia
and GTS in a series of meetings, Radio broadcasts and press articles.

Isatou, left
in late 2003

Tunko
started as our first female host in late 2003, she has very successfully
run GTS trading since then and is now fully responsible for the new
GTS day out - run every Wednesday

Rasta,
or Lamin left GTS after marrying
and travelling to England

Jerreh looked
after GTS while Kabs was in the UK. He is not only an excellent host,
but is brilliant with the charity sponsorship work and an excellent
spokes person for GTS

Modou started
as a host in January 04. he is popular with tourists and has great
potential for development.

Yankuba
is on a sponsored placement with GTS, he has started exceptionally
well and will cover all parts of the GTS organisation during his 12
months with us, so you coul meet Yanks in any job at present he is
a GTS host.

Adam
Glynn continues to manage The
GTS Bar & Restaurant, his 3rd full year at it.
Adam is always very concious that at heart GTS is a charity, but
his determination to run a professional business and have professional
staff has made GTS one of the most popular Basr & Restaurants
in The Gambia
The Head
Waiter
Alikarlo,
or
Lamin is our Head waiter and has been ever since 2001. He does
a superb job and is seen as a 'star' within the restaurant, helping
to keep things running smoothly. He is very professional but manages
to keep the customers entertained every evening. Alikarlo has a great
spirit; GTS is greatly improved having him around
Day
time Waiter

Alhagie
works as the waiter during the day
time. His day involves the lay up of the restaurant, followed by serving
beverages and meals to the customers. However Alhagie fits the typical
Gambian 'easy easy' temprement and is happy to do anything that needs
to be done. Alhagie has a magnetic tendancy towards food and is sure
to be located wherever the food
is!
Security

Ceedie is
our evening security he just makes sure our guests are safe and not
bothered by anybody.

Momo,
at night
Momo takes care of GTS - but his role is alos looking after the garden
and plants.
Taf, on disco nights Taf is the main DJ at GTS playing soft Reggae
till the early morning

Bar &
Restaurant Assistant Manager

Mansa,
or Lamin Drammeh has not found it easy to make the transition
to a management role.But
over the year he has done just that, while still maintaining a very
good working relationship with all of his Gambian co-workers.
Fatou,
- after
3 years with us - Fatou has left to go to Holland (Jan
04)
Adam
tells me he has appointed two new staff to replace Fatou, I await names
and pictures (Feb 04)
Maid
& Cleaner

Fatou
Bojang, after 2years with GTS Fatou married in late 2003 and left
shortly after - we wish her great happiness.
Filley has tranformed
the place: Everyone agrees that they have never seen such work, there
is not a corner of the premises, the road outside or the garden that is
not beautifully maintained by her
Behind
the Bar
Sally started
with GTS in summer 2003. She is simply wonderful, reliable and one of
the nicest people I have ever met. She runs the bar and acts as the daytime
waitress until Mansa orAdam arrive to take over.
Sally kindly helped me to learn some more Mandinka & it was during
this that I realised that Sally has great teaching potential - as much
as I would hate to lose her, I hope one day she may qualify as a teacher.

Hallimatou is
our official fruit seller, she is based at the front of GTS but has been
assocuated with GTS since 2001

GTS
Bar & Restaurant Kitchen Staff

Solomon
is our new Head Chef, Nov 2003, replacing Pa who travelled
to Turkey to take up a chefs job there..
Solomon
is quiet and efficient, the kitchen has never run as well and meals
are served now in record time, while preserving with wide menu choice
and even adding significantly to it.
The
Evening Chefs

Janobah, joined us in late December, she increases our chef total
to four. She is an excellent all rounder but has added a professional
finishing touch to the meals
Serif,
continues with GTS - even though he started a chefs course during
late 2003 GTS & his colleagues have been able to be flexible with
his hours while he has ben working on placement at the Senegambia Hotel.
The
GTS Day time Chef

Lamin,
never fails to arrive later than 8am for his morning shifts! He is a
very hard worker, always busy cooking meals or preparing food to help
the evening staff. He is an ambitious character, with his head in a
book during any spare moment! No
change since last year - Lamin hopes to start a chefs course later this
year and has assured me that he will stay with GTS after he qualifies.
Our
Kitchen Helpers

Fatou
Manneh, is the evening kitchen helper.
She prepares the garnishes and side orders as well as providing the
workers with their evening meal. Fatou's other main role is to wash
all the dirty utensils and dishes that are created during the evening
shift. Her wonderful smile and character compliments the atmosphere
of the kitchen.
Unday
- helps in the kitchen and covers as our maid when Filley is day off
- she has a great sense of fun and humour she brings more than just
work to the job

Rozalee, is
our evening maid - ourtoilets are spotless and sweet smelling because
of her constant supervision
