Since January 2001, one aim of GTS has been to create a continual increase in the number of employed staff. GTS sees a strong team of staff as the key to a smooth operating restaurant AND charity. GTS now employs 25 members of staff and hopes to keep that number increasing.


The 'New' GTS Bar & Restaurant


Dardeema our base till January 2003

GTS started by supporting the family who were running Dardeema. Unfortunately in December 2002 the family wanted the restaurant back so GTS has set up a new restaurant on the land leased next to Dardeema. The new premises have been called
GTS Bar & Restaurant
.

In January 2003 we opened the new "GTS Bar and Restaurant" The move to a two floor restaurant offering a Bar as well as a full 'a la Carte' menu shows how far and quickly the GTS staff have progressed.

are rightly proud of their achievements in such a short space of time.

Although all the staff provided some help during the move, the real effort was put in by Mansa Francis & Adam, painting the new walls white, putting up shelves, finishing the bar and a special thank you to Eric for the lights, India for the GTS sign board and May for the wonderful hand written menu.


Indee provided loads of help in the month she was there


Aimee was just brilliantly Canadian everything was hilarious - a real star with a great sense of where GTS is going

Like all of us Toubabs - Aimee found it hard to understand why so many Gambians simple don't want to help themselves OR spend all their time helping themselves to what isn't theirs.

GTS Manager in The Gambia


Kabs
runs the GTS Gambia Charity. He is responsible for the sponsoring of children and the supporting of schools. He is also in charge of organising tour trips to the local areas of The Gambia.
He has a lot of responsibility as he is the key link between GTS UK & GTS Gambia.

GTS Staff


Isatou,
is a new member of staff working in the GTS office. Her main roles are to answer the phone and help with any queries that GTS members or potential members may have. She is also being trained on the GTS computer. Before starting at GTS she had never used a computer so now being competent at word processing and sending/receiving e-mails is a big achievement for Isatou.


Rasta, or Lamin is the other member of staff whose main concern is with the GTS charity. He is responsible for visiting the sponsored children and schools to check up on their attendance & performance etc. He also has to make termly trips to pay for the various fees required. Rasta also acts as a GTS host and is always more than happy and extremely proud to show tourists his homeland!

Our Watchman


Momo,
takes care of the restaurant & GTS office during the evenings & nights. He has a set of all the keys and opens up in the mornings. Always around he keeps a general look out for the safety of GTS. Momo has developed enormously over the last two years. He now has a confident manner and has lost his initial shyness. His most astounding improvement has been in his language. Momo spoke no English two years ago, but now can hold a full conversation in the English language!

GTS Bar & Restaurant Manager


Adam Glynn our son, trained in the UK and has managed restaurants in Shropshire and York, before making his move to The Gambia. He now manages The GTS Bar & Restaurant.
Having been settled here for two years we are beginning to see the 'Gambian' Adz taking over! His naturally easy and relaxed attitude goes down well with the staff and the customers.

The Head Waiter

Alikarlo, or Lamin is the Head waiter at GTS Bar & Restaurant and has been ever since Dardeema was up & running. He does a superb job and is seen as a 'star' within the restaurant, helping to keep things running smoothly. He is very professional in the way he works but manages to keep the customers entertained every evening. Alikarlo has a great spirit; GTS is greatly improved having him around

Day time Waiter


Alhagie works as the waiter during the day time. His day involves the lay up of the restaurant, followed by serving beverages and meals to the customers. However Alhagie fits the typical Gambian 'easy easy' temprement and is happy to do anything that needs to be done. Alhagie has a magnetic tendancy towards food and is sure to be located wherever the food is!

Bar & Restaurant Assistant Manager


Mansa
, or Lamin Drammeh was the bar man last year. However, Adam felt that Mansa had the potential to become the day-time Manager, running the Bar & Restaurant. He displays high levels of responsibility and commitment and is a very reliable member of staff.
He maintains a very good working relationship with all of his co-workers.

Waitresses

Fatou, yes another Fatou! or Effy is a waitress, working alongside Alikarlo. She is a hard worker and keen to improve. When Effy joined GTS, she was unable to read and write but GTS Charity funds her schooling during the day and then she is paid to work as the evening waitress. Her reading and writing skills are quickly improving, with her practising every evening on the orders at the restaurant. She has a vibrant character and finds it difficult not to smile!

Maid & Cleaner


Fatou Bojang, is the GTS cleaner and local cook. She comes into work at 9am to complete the cleaning and washing created the day before. Her other main role is to cook local food for all of the staff, which consumes a large part of her day. Her local food is regarded as 'The Best in The Gambia' by many Gambians, not just the workers!

GTS Bar & Restaurant Kitchen Staff


Pa, is our new Head Chef, Jan 2003, replacing Bunja who was keen to travel to Europe to improve his knowledge of the catering industry.
Pa has left the celebrated Coconut Residence to join GTS and brings with him great motivation and enthusiasm. He is enjoying the new challenge and is keen to help train the other chefs. Pa has helped to create a very friendly working relationship amongst all the kitchen staff.

The GTS Evening Chef


Serif, works alongside Pa, helping him with the orders. As the picture portrays Serif is a 'bag of smiles' with a very happy temprement. This helps during busy times in the kitchen as he stays relaxed and keeps the kitchen calm. He does his job very well and is always keen to learn new ways.

The GTS Day time Chef


Lamin, never fails to arrive later than 8am for his morning shifts! He is a very hard worker, always busy cooking meals or preparing food to help the evening staff. He is an ambitious character, with his head in a book during any spare moment!

Our Kitchen Helper


Fatou Manneh, is the evening kitchen helper. She prepares the garnishes and side orders as well as providing the workers with their evening meal. Fatou's other main role is to wash all the dirty utensils and dishes that are created during the evening shift. Her wonderful smile and character compliments the atmosphere of the kitchen.
