The GTS Restaurant takes on a quite different atmosphere at night, with the patio lights and outside sign lights providing a pleasant light for eating - and the lights inside glow with a warmth to invite people into the bar area where they can see the work of various local artists that we display on the walls and offer for sale at fixed prices.

Open from 9.30 am 'ish onwards, means the place is used as a bar and place for a light snack during the whole day, as well as an excellent restaurant with an extensive all day menu at very reasonable prices.

We have a policy, "if it's on the menu, it's available to eat".

We achieve this by having two large freezers to accomodate our wide range of stock and an automated switch system to ensure the generator is on when the mains electric is off. Food is cooked freshly to order but our chefs generally take no longer than 10-20 minutes from order to table.

Our ingredients are obtained locally, this includes all the fresh Beef, Fish, and a wide variety of different sized prawns and lobsters. At present Chickens in the numbers we require, are not available locally and have to be bought deep frozen.

Potatoes are mainly imported, most rice is imported, but fresh vegetables and fruits are mostly grown in the Gambia.

Soft drinks are bottled at the local Julbrew factory, most spirits are imported from Europe and wines come from many different countries. Although a Muslim country, most Gambians are pragmatic about alcholic drinks, happy to sell them as long as they are not expected to drink any themselves.

In many Gambian restaurants Pork is sold - many Gambian chefs will prepare and cook pork for non Muslims but we made the decision not to use any pork related products anywhere on the premises to avoid any possible offence to our staff and other local people.

We are currently developing the back to provide a walled garden restaurant which will be mainly candle lit.

We are very proud of the restaurant and in the spirit of all of our charitable work in The Gambia, we take no income from the restaurant - Adam has extended his year from UK employment to help manage and get it running efficiently for a second year and I will now spend from November to January each tear helping and planning GTS development which Dardeema is helping to fund.
