Any business works because of its staff, we have managed to get a brilliant starter team.
The trick now is to find new people who will fit in with the team and pull their weight


Dardeema NO longer anything to do with GTS but still attempts to use the GTS name to get business and fills the road with bumsters to prevent customers coming to the NEW GTS

Bunja is our main chef He has worked in hotels and restaurantsand has trained to create the excellent dishes we off on the menu. After several months Bunja left at the end of the season but returned as our head chef when Cham left.

Lamin, our head wiater, has worked in the industry before but when a hotel closed he was left without work and jobs are so few it has been two years before this opportunity arose.
Since starting work on Dardeema we have had over 100 people asking about work. We wished Dardeema was bigger so we could employ even more staff and hope to open a garden bar area at the back of Dardeema, where we can run programs in the evenings.

The NEW GTS Bar and Restaurant opened in January 2003 all the staff except Cham remain with GTS.

Dardeema is no longer run as a charity - it is not part of GTS - other than being our neighbours.

Serif
Is our second chef, he started work with Cham at Dardeema as the kitchen helper and has progressed quickly. He is very keen to learn and trains with Cham each evening

Fatou
Fatou worked in the original Dardeema and has stayed on to prepare the local food that Dardeema serves each day from noon. Her cookery is so well regarded that we have many local Gambians eating at Dardeema each day.


Other Fatou (Effy)

Effy is our waitress, her brilliant smile and wonderfully easy manner has made her a favourite with all our visitors.
Effy started at Dardeema with no previous waiting experience but she has established herself on the staff

Hali
We met Addi and her 5 children a few years ago and now we have the chance to have her working as our morning maid.
In the afternoons and evenings Addi sells her fruit round the tourist area.

Since then Hadi has moved to GTS Brufut2 wher she has started the garden project.

Little Lamin
One of our early members, Kirsty introduced us to this Lamin, he is the fixer at Dardeema, waiting cooking, cleaning starting the generator he can and does turn his hand to everything



Lamin has now moved to GTS hosting July 02


Rasta Baby - Foday
Foday is in charge of promotions, giving tourists flyers - the GTS approach is to just give the information with no hassle. It has worked well with many customers mentioning this when they come for a drink or a meal

When the season ended Foday left GTS as there were really no tourusts around to give flyers to.

Aladji
When Dradeema opened we soon realised that we would need day staff and Aladji opens up and acts as waiter and barman from 10 in the morning to 3 in the afternoon when Adam starts

Adam
Our second son, Adam trained in the UK and has managed restaurants in Shropshire and York before taking a gap year to establish the Restaurant.
His naturally easy attitude goes down well with the staff and the customers, his music is now part of the Dardeema image

GTS started by supporting the family who were running Dardeema, now Dardeema is providing money to GTS to support its charitable works in the Gambia and employs more staff than we expected to support for several years.
